Description

The primary responsibility of a Distiller includes, but is not limited to, all aspects of day-to-day distilling decisions with regard to quality, quantity, and style of the final product. The Distiller also schedules and produces beer and wine for distillation. A Distiller must be able to analyze and monitor beer and wine fermentation cycles and other aspects that are critical to the production of beer and wine. This position also will be required to participate in distilling education, including distiller dinners, employee tasting, wine and beer festivals, and meet your maker events. Other duties include bottling, labeling, ordering raw materials, and pricing. The Distiller works integrally with the bar manager to design recipes for McMenamins cocktails. The Distiller must be current with all applicable TTB compliance and taxation regulations. A thorough knowledge of OLCC regulations on liquor store operation for filling and tracking orders and sales is required. The Distiller must keep current and remain flexible when it comes to cost controls, future expansion and changing styles of the finished product. All McMenamins employees are expected to perform their job in a safe manner and report any safety concerns to Management. All McMenamins employees will also be expected to keep current on all company events, history, and products. Other duties as assigned.

Requirements of the Job:

  • Thorough knowledge of distilled spirits and distilling
  • Knowledge of beer and brewing
  • Knowledge of viticulture and wine grapes in the pacific Northwest region
  • Thorough knowledge and experience with fermentation and troubleshooting ferments
  • Knowledge of Still operations
  • Previous cellar experience preferred
  • Excellent organizational and prioritizing skills
  • Ability to effectively work in a stressful and deadline oriented environment
  • Ability to have a flexible schedule including days, weekends, and special events and holidays required
  • Attention to detail as well as effective prioritizing and multi-tasking skills
  • Exhibit knowledge of basic mathematics with or without the use of a calculator

Essential Job Functions:

  • Judge and maintain acceptable standards of product quality as well as the efficient production of quality distilled spirits
  • Safely practice heavy lifting and carrying with the help of another person if necessary
  • Maintain a positive attitude with the ability to communicate clearly and interact positively and professionally with employees and customers
  • Work around and with heat sources, hot liquids, heat exchangers, natural gas burners as well as work in distilling environment and grain dust
  • Perform fine hand manipulation including handling small and large objects, and use of brewery related equipment & tools
  • Perform Repetitive movements including bending, pushing, pulling, twisting, and stooping
  • Use of ladders and exposure to heights
  • Work on feet for long periods of time
  • Comply with all Distillery safety procedures and policies
  • Ability to concentrate and focus effectively
  • Work around and with electrical devices, such as motors, pumps, refrigeration equipment and plate/roller mills
  • Safely handle and with and around cleaning agents and caustic chemicals such as; caustic soda, and alkaline cleaners, acid cleaners, iodine sanitizers & bleach
