Job Summary: Under the direction of the Winemaker, the Assistant Winemaker will contribute to all aspects of the winemaking process and will help oversee and participate in all cellar operations from grape to bottle and occasionally help with vineyard work. This position comes with partially subsidized housing for the first year, it is a career path position with a very promising future for the right candidate!!

Primary functions:

  • Plan and execute all aspects of grape and wine processing under the direction of the winemaker. Including: grape crushing, fermentation, filtration, stabilization, blending, bench trials, bottling, quality control and finishing of wines.
  • Control Laboratory duties and train other staff members on lab work. Oversee and monitor fermentations and temperatures.
  • Supervise or execute additions of SO2, Enzymes, Yeast and other additions.
  • Work closely together with other Assistant Winemakers/Cellar master and ensure that all activities are done in a timely manner and quality oriented and that all instructions from the Winemaker are implemented.
  • Inventory entries as well as update cellar book entries. Be aware of production costs and product quality, contribute to production modifications and inventory control programs to maintain and enhance winery operations.
  • Monitors storage conditions, maintenance and sparging of head space, topping of barrels, SO2 empty barrels and general quality control.
  • Involved with cellar and bottling work: clean tanks, barrels, wine making equipment, operate pumps, filter, fork lift, grape press, destemmer, transfer juice, etc.
  • Work closely with Winemaker regarding the cider production and be the liaison to the Cider winemaking team. Help plan, buy and oversee the cidermaking supplies, the juice deliveries and fermentations and the storage and blending and bottling.
  • Develop cider making protocol and set of test/quality standards.
  • Innovate with new product ideas and process innovations.
  • Help with environmentally responsible winegrowing and low intervention winemaking techniques.
  • Oversee purchasing and PO process of wine and cider making materials and equipment.
  • Represent Wolffer in various marketing activities such as wine dinners, special tours, and high value tastings.

The ideal candidate will have 3 to 5 years of experience + an Oenology Degree.
Organizational skills are critical to this position as is a great personality!!
