  • Assist guests with wine, sake and champagne selection, consider their taste and budget when guiding them through the menu
  • Anticipate guest needs. Provide information to guests regarding our venues, menus and pricing
  • Explain how our wines, sake or champagne menu compliments the items on our food and dessert menu.
  • Ensure all wines, sake and champagnes are presented and served correctly and all pouring techniques are adhered to as specified by company standards. 
  • Inform and explain alternative wine, sake or champagne selections to guests should their choice be unavailable
  • Ensure that sommelier team assists with food service when required
  • Follow up with guests to ensure their satisfaction, to re-pour and to potentially sell additional items as often as possible
  • Ensure all wines, sake or champagnes are entered into the POS system before being served to the table.
  • Assist servers in clearing the tables when you are coming back from running wines or food to tables or whenever a server asks for help.
  • Ensure all wine is served according to the company specifications, always use position numbers so that the guest is not disturbed unnecessarily
  • Follow the order of service
  • Ensure that all wine lists are in perfect condition always.
  • Assist management with any trade events on choice of wines, order quantities, glass selection, service style, timing etc.
  • Know and describe all wines on the list
  • Notify management if stock levels are below par levels
  • Participate in training sessions and briefings to improve the staff’s overall knowledge of wine in general,
  • Attend wine tastings and meetings on designated days
  • Attend the Sommelier team meetings and any other meetings as requested
  • Attend the weekly team tasting of wines with food when requested
  • Attend trade events and wine tastings as requested
  • Maintain company brand “wine culture” through actively participating in training sessions with the staff
  • Participate in the Sommelier Apprenticeship scheme and work towards qualifications as Lead or Senior Sommelier (if applicable)
  • Always follow the Sommelier Code of Conduct when participating in tastings
  • Ensure storage rooms and wine coolers are kept neat and organized
  • Check deliveries to ensure correct quantity, wine types and vintages are delivered
  • Ensure that glassware and necessary equipment for wine is always within the par levels and anticipate lead times for further ordering
  • Maintain proper inventory levels of wine, other beverages and supplies
  • Update inventory locations and bin labels whenever wines are moved
  • Check beverage and food orders prior to serving to ensure that they are correct, properly presented and that special requests have been met
  • Deliver beverage orders promptly
  • Organize and prioritize service per appropriate service sequence
  • Prepare guest checks through POS terminal functions. Process guest payments by cash, credit card, venue comps and all other tender types
  • Responsible for proper check–out procedures
  • Appear in uniform for all shifts and promotional activities at scheduled time
  • Keep bar top clean and free of dirty glasses, dirty ashtrays, trash, etc. throughout shift. Clean all spills and waste immediately. Place all trash in proper receptacles  
  • Proper set up and maintenance of banquet function spaces
  • Inform management of any complaint, comments or incident
  • Ability to create and maintain service rapport through the company corporate philosophy
  • Respond to guest inquiries and requests in a courteous and polite manner
  • Adhere to all company Standard Operating Procedures. Maintain all Company Sequence of Service Standards
  • Maintain line of sight/atmosphere control by circulating through your work area throughout shift
  • Report any incidents of theft, vandalism, or violations
  • Respond to Guest concerns/complaints and correct errors or resolve complaints with a positive attitude
  • Recognize and acknowledge when guests are becoming intoxicated and/or are intoxicated
  • Monitor potentially intoxicated and/or disruptive guests and promptly bring to a Manager’s attention
  • Comply with all safety and health department procedures and all state and federal liquor laws. Maintain company safety and sanitation standards
  • Ensure nightly/weekly and opening/running/closing duties are completed
  • Record and report any equipment failure and/or safety hazards to a Manager immediately
  • Assists and/ or completes additional tasks as assigned

EDUCATION/REQUIREMENTS:

  • High School Diploma preferred
  • Proof of eligibility to work in the United States
  • Valid Driver’s License
  • 21+ years of age
  • Possession of or the ability to possess all state/venue required work cards
  • Maintain a professional, neat and well-groomed appearance adhering to Company standards

WORKING KNOWLEDGE REQUIREMENTS:

  • Minimum of two (2) years of Sommelier experience in an upscale fine-dining establishment
  • WSET certifications preferred or certifications from another accredited wine institution such as the Court of Master Sommeliers
  • Extensive knowledge of wine and wine service techniques
  • POS systems
  • Beer, wine, spirits, and cigar brands
