Executive Director of Wine (Wine Jobs: Wine Retail & Sommelier)

Job Purpose: Lead Food & Beverage Division to select and manage all aspects of wine requirements for the resort’s restaurants and F&B operations. Order and maintain an inventory of high-quality, profitable wines for resort guests. Manage and review monthly budget and finances. Train and educate F&B Team Members in wine sales and appreciation.

Key Responsibilities

Daily Operations

  • Manage the wine operations cost-effectively and efficiently within budget
  • Ensure the wine service teams deliver Wynn’s high standards of quality, service, and guest satisfaction in accordance with established policies and procedures
  • Select and manage wine requirements and maintain an inventory of popular, high-quality and profitable wines
  • Creation of restaurant specific wine programs, tailored to the concept and cuisine
  • Develop and execute quality and control mechanisms for wine operations including service, beverage, hygiene, administration
  • Monitor the monthly operating budget and take corrective action as necessary to help assure that budget goals are attained
  • Develop and implement an innovative business strategy for the wine program to maximize revenue and productivity
  • Prepare and present regular reports on the wine program to management
  • Ensures restaurant floor Sommelier coverage across Fine Dining restaurants
  • Purchase, store, receive and requisition high-end wines for the resort’s cellar
  • Review and manage monthly revenue and expenditure records
  • Update and maintain beverage menus throughout the property
  • Control expenses and research ways to generate more revenue
  • Work closely with the General Managers to ensure the wine program is up to standards
  • Work closely with the Beverage Dept. to capitlize on any synergies and opportunities
  • Utilize the resources and talent to execute tasks in a timely manner
  • Support Encore Boston Harbor’s wine program when needed/requested
  • Accept any other duties and responsibilities assigned by the Senior Vice President – Food and Beverage

Guest Services

  • Share your passion for wine and pass on your knowledge of wine regions, grapes, vineyards and vintages
  • Provide personalized service to media and VIP guests
  • Recommend wine and food pairings

People Management and Training

  • Write and implement standard operating procedures and learning guides about wine
  • Constantly assess wine and beverage service standards and arrange refresher training to improve team members’ competency levels
  • Creates wine training program and future Sommelier training

Company and Department Responsibilities

  • Monitor industry and market trends and recommend adjustments to menus and pricing accordingly
  • Suggest creative ideas to executive management to enhance the resort’s image on the wine offering
  • Interact with department and company team members, management, and contractors professionally and positively
  • Attend division and inter-division meetings and share relevant information
  • Encourage good relationships, promote team spirit, and ensure effective two-way and multicultural communications
  • Adhere to the company policies and procedures and comply with the Code of Conduct
  • Remain well-mannered and well-groomed as per department and company standards
  • Follow health and safety standards and strive for constant improvement to avoid health and injury hazards
  • Participate in the company recycling program and follow a strict discipline to reduce, re-use and recycle wherever possible

Requirements

Experience: Minimum of 8 years’ wine and beverage management experience an advantage
Knowledge/Certificates: Excellent product knowledge of international wines and characteristics, and food and wine pairing; Wine and Spirit Education Trust (WSET) certificate or Court of Master Sommelier (CMS) certificate or International Sommelier Guild (ISG) certificate an advantage
Education: Bachelor degree or above in a related field an advantage
Language Abilities: English
Computer Skills: Proficient in Microsoft Office
