Sommelier (Wine Jobs: Wine Retail & Sommelier)

Summary
The Sommelier is responsible for maintaining a broad wine list and knowledge of wine for the restaurants at The Little Nell, as well as, serving Guests within Forbes Five-Star Standards.

Essential Job Functions
• Work with wine director and element47 and Ajax Tavern team for once a week wine tasting (15 minutes) during pre-service for AM and for PM
• Assist in the management of element 47 and Ajax Tavern, the living room, and the Wine Bar by providing support and leadership including working 1 lunch shift a week and 1 closing shift per week (possibly more based on business)
• Play integral roll in the hiring and training of all new staff for element 47 and Bars
• Assist in the daily maintenance including organization, restocking, wine cellar, wine fridge, wine wall, and BTG Room to ensure it is current, clean and organized
• Reprint all wine lists and BTG daily and ensure micros, accubar, and wine lists are always current
• Create and distribute all BTG descriptions to bar, element47 and room service prior to implementation
• Constantly further your wine knowledge and that of your peers
• Assist in the planning, organization and execution of all special wine events and promotions
• Benchmark and provide innovation on product, training, organization and systems as they relate to not only wine service but the day to day operation of the restaurant
• Conduct monthly inventory working closely with wine director and accounting to resolve any inconsistencies with accounting in a timely manner
• Ensure micros, and accubar are updated to reflect all changes prior to service
• Complete tasks and projects delegated by your Supervisor and assist other departments as business volumes and staff levels demand
• Will report for work in a neatly groomed and acceptable manner as outlined in the employee handbook and further developed in the departmental rules
• Assist in emergency and security procedures as directed by management and the established emergency plan
• Comply with all policies and procedures of the Food and Beverage Department, The Little Nell and Aspen One

Supervision Given and Received
Given: This position has no supervisory responsibilities.
Received: Works under direct supervision of the Wine Director. Tasks are assigned according to specific procedures, and work is checked frequently. Instruction, advice and assistance are readily available.

Work Environment and physical demands
• Ability to reach, crouch, kneel, stand, walk or be on your feet for extended periods of time
• Regularly work in wet, hot and humid conditions for extended periods of time and may be required to walk on slippery and uneven surfaces
• Must be able to frequently lift, push or pull up to 50 lbs. individually or with assistance

• College preferred or hotel/restaurant training
• 3 years in a fine dining establishment
• Extensive wine knowledge (successful completion of advanced level of The Court of Master Sommeliers preferred)
• Possess Excellent Computer skills (Excel, Word, Outlook, Powerpoint)
• Comfortable presenting and speaking in public to large groups
• Knowledge of food and cooking methods
• Comprehend F&B finance models as they relate to pricing, inventory COGS, analysis and problem solving
• Exude hospitality, possess a thirst for knowledge and a contagious sense of enthusiasm towards food and wine
