Quality Lab Technician (Wine Jobs: Vineyards & Cellars )

THE BIG PICTURE

Quality Lab Technicians are responsible for ensuring the quality and reproducibility of our beer. They play active roles in lab setup, maintenance, QC, sensory analysis and culture maintenance. Quality Lab Technicians will report to the Quality Lab Manager, and will follow procedures established for and approved by Modern Times Beer. Candidates must share Modern Times’ commitments to quality, safety, business ethics, and continuous innovation.

THE EVERYDAY VIEW

•  
  • Perform daily cell counts of yeast and fermenting wort
  • Perform daily standardized testing on fermenting and finished beer, including but not limited to: pH, specific gravity, alcohol by volume, color, IBU’s, forced diacetyl analysis, and dissolved oxygen
  • Prepare stock solutions and media plates
  • Conduct aseptic and environmental sampling throughout the brewery
  • Assist in sterile plating and testing of wort, beer, and yeast samples
  • Assist in the organization and maintenance of a sensory program
  • Perform regular calibration and/or cleaning of lab equipment including but not limited to: alcolyzer, densitometer, CBox/PFD gas meter, autoclave, pH meter, centrifuge
  • Organize and track all applicable data
  • Maintain a clean and organized laboratory environment

DESIRED SKILLS AND EXPERIENCE

  • Must be 21 years of age, or older, at the time of application
  • Able to pass a post-offer, pre-employment background check 
  • Knowledge of brewing and fermentation process
  • College degree in microbiology, biology, chemistry, or related field is preferred
  • Basic laboratory experience, knowledge of GMPs is a plus
  • Strong work ethic and self-starting attitude
  • Excellent interpersonal skills
  • The desire to work in a fast-paced, growing company
  • Genuine enthusiasm for craft beer
  • Willingness to regularly work weekends and occasional evenings 

QUALIFICATIONS

•  
  • Able to stand for prolonged periods
  • Able to stoop, crawl, twist, turn, lift, kneel, climb ladders and stairs
  • Able to manipulate valves and clamps
  • Able to read and follow written English instructions
  • Able to regularly lift/carry 50 pounds
  • Able to safely work in a fast-paced production environment which may be loud, humid, and hot
  • Able to comply with safe chemical handling procedures, including personal protection equipment such as gloves, safety glasses, and face shields

ABOUT MODERN TIMES

Modern Times is a 30 bbl production brewery in the Point Loma neighborhood of San Diego. Modern Times is named after a beautifully crazy utopian community founded in 1850, and (almost) all of our beers are named after real utopian experiments or mythological utopias. Today, we're distributed throughout California, Nevada, Arizona, Maui, and select international markets. We operate a tasting room at the brewery, as well as in San Diego’s North Park community. We plan to open new locations in downtown LA & Anaheim in 2017, both featuring brewing facilities, restaurants, specialty coffee shops, and much more radness than we can possibly list here. We brewed our first batch on May 18th, 2013; our beer went on tap for the first time on June 24th 2013; we held the soft opening for the Lomaland Fermentorium tasting room on August 9th, 2013; and our Grand Opening was September 7th, 2013.
