SUMMARY-

Under minimal supervision, participates in complex phases of winemaking processes as well as the care, maintenance, and sanitation of all equipment and facilities for The Ranch Winery. Must adhere to all safety procedures, support quality and GMP standards.

ESSENTIAL FUNCTIONS-

  • Functions as the lead operator for winery operations.
  • Operates winery equipment (e.g. bottling machines, pumps, CIP system, filtration, presses, white and red grape press controls, and receiving equipment.).
  • Performs inventory reconciliation using SwissLog; publishes reports, and communicates discrepancies.
  • Performs quality checks and inspections, enters data into Quality Program or records on forms.
  • Opens and closes Wine Manager, JDE, and Swisslog work orders.
  • Maintains housekeeping, sanitation, GMP, and PPE requirements.
  • Works safely while completing all assigned tasks; reports any observed unsafe acts or conditions.
  • Remains alert at all times; reports any observed problems promptly to the management team.
  • Trains and coaches new or existing employees as needed.
  • Drives a forklift and operates warehouse systems.
  • Oversees shift functions when Wine Tech 4 or Team Leader are not present.
  • Performs Wine Technician 2 essential functions when necessary.
  • Participates in the development and continuous improvement of work instructions
  • Must maintain satisfactory attendance, to include timeliness.
  • Responsible for understanding and complying with applicable quality, environmental and safety regulatory considerations.

QUALIFICATIONS-

MINIMUM QUALIFICATIONS- 

  • High School Diploma or State-issued equivalency certificate plus 3 years of wine production experience or 5 years of Wine Production experience showing increased levels or responsibility.
  • Required to work a rotating shift/schedule throughout the year (day, swing, graveyard, 5x8, 4x10); required to work weekends and overtime when necessary.
  • Required to be physically capable of executing any job tasks within the bottling room or cellar.
  • Required to wear a respirator when necessary.
  • Required to undergo onsite forklift certification.
  • Skilled in reading, comprehending, interpreting and executing simple instructions, short correspondence, and memos.
  • Skilled in writing simple correspondence.
  • Skilled in adding, subtracting, multiplying and dividing using whole numbers and units of measure (inches, feet, gallons, etc.).
  • Required to conduct job duties at elevated heights.

PREFERRED QUALIFICATIONS-

  • High School Diploma or State-issued equivalency certificate plus 5 years of wine production experience reflecting increasing levels or responsibility.
  • Experience engaging in shipping and receiving (logistics) functions including working with associated computer systems.
  • Knowledge of beverage manufacturing as it relates to liquid processing and machine operation
  • Basic knowledge of 5-s principles (organization)
  • Familiar with GMP and sanitation as it relates to food processing/handling.
  • Knowledge of basic winemaking.
  • Knowledge of basic Wine Chemistry – Brix, alcohol, TA, pH, RS, VA, SO2, Temperature, O2.
  • Knowledge of basic fermentation – primary and secondary fermentation, spoilage, controls (SO2, temperature, sanitation).
  • Knowledge of wine processing – heat/cold stability, filtration, centrifuge, WAF, O2 pick-up, MOX, fining, bottling.
  • Experience showing versatility, flexibility, and a willingness to work within constantly changing priorities.
  • Basic knowledge of Microsoft Excel, Outlook, and Word.
  • Experience leading small teams.
  • Experience using a computer.
  • Experience being a team player.
  • Experience understanding, giving or, following written and verbal instructions.
  • Skilled in basic mathematical operations.
  • Skilled in written and oral communication.

The noise level in the work environment is usually moderate to loud. Works in all areas of winery including the wine cellar, where temperatures are cool. Works with and around chemicals, including (but not limited to) Sulfur Dioxide, Peracetic Acid, Laco-quat, Carbon Dioxide, Sterox and tartaric acid. The employee is frequently exposed to working at elevate heights; moving mechanical parts and risk of electrical shock.
