BUSINESS DESCRIPTION:
Schramm's Mead is a growing small business flourishing in Ferndale, Michigan. Mead, the fermented beverage from honey, is one of the oldest alcoholic beverages known to mankind, and has been considered the drink of royalty throughout much of its rich history. The meadery prides itself on creating delicious mead, using only the highest quality ingredients, taking the time and care to craft a perfectly-honed product. Our focus is on providing excellent service to our patrons, who often come from great distances to enjoy the Schramm's experience.

JOB SUMMARY:

Seeking experienced commercial winemaker for small, ultra high-quality meadery in suburban Detroit, Michigan. Successful candidate will have extremely strong work ethic, high standards, and enjoy working in a progressive, diverse, entrepreneurial environment. 

SKILLS AND QUALIFICATIONS:

High School Diploma.
College degree or credit in subject of Biological Engineering, Biology, Chemical Engineering, Chemistry, Enology, Fermentation Science, Food Science or Microbiology plus 1 year of chemistry, enology, or winemaking experience OR 5 years of chemistry, enology, wine/ meadmaking experience or commercial food processing.
1 or more years experience with commercial mead or winemaking equipment and processes.
Excellent customer service and interpersonal communications skills.
Familiarity with mead styles, varietal honey, yeast varieties and fermentation characteristics, fermentation management.
Strong knowledge of sanitation processes, fermentation chemistry, fermentation kinetics, yeast nutrition needs.
Strong written and oral communication skills.

Creativity, flexibility, willingness to learn and ability to work under stressful conditions.
High level of craft beverage product knowledge.
Strong organizational & planning skills.
Required to identify variances in mead by sight and identify mead flaws by taste and smell.
Working knowledge of Microsoft Office & Google Drive.
Ability to work independently with little supervision – self motivated.
Ability and willingness to maintain flexible work schedules, as weekend and extended workdays are necessary.
Must be able to lift and move 50 lbs.
Valid driver’s license and acceptable driving record. 
Ability to travel to various customer locations and industry events via automobile.
Must be at least 21 years of age.

ROLES AND RESPONSIBILITIES:

Rigorous adherence to safety procedures as outlined in SOP documents and MSDS sheets for materials and chemicals used at the meadery.
Receiving and ordering of product.
Performing product inventory.
Conforming to the regulations of the Michigan Liquor Control Commission and Tax and Trade Bureau.
Maintaining safe, secure, and healthy environment by establishing, following, and enforcing sanitation standards and procedures, complying with legal regulations, developing and implementing disaster plans, maintaining security systems, maintaining parking lot and walkways.
Communication with Director of Operations on releases and special events.
Sanitation, facilities organization and maintenance of tanks, hoses and all production equipment.
Documentation of mead making practices, production quantities and other pertinent records.
Hands on participation in all aspects of mead production with batch sizes ranging from 20 liters to 3700 liters, including ingredient handling, batch preparation, punch downs, fermentation management, and racking. 
Hands on participation in all aspects of packaging, including bottle rinsing, keg preparation, sanitization and filling, operation of automated and manual bottling systems, filling and handling of cases, palletizing. 
Additional duties may be assigned as necessary.

While performing the duties of this job, the employee is regularly required to talk or hear, and to taste, smell and visually evaluate meads. 
The employee is frequently required to stand, walk, sit, use hands to finger, handle, or feel, reach with hands and arms, climb or balance, and stoop, kneel, crouch, or crawl.
Must be able to participate in critical assessment of meads.
Vision abilities required by this job include close vision, distance vision and the ability to adjust focus.
