Position Summary

 

As part of our winemaking team, the Cellar Supervisor in coordination with the Associate Winemaker is responsible for performing and directing all table, sparkling and dessert wine cellar and crush operations at our Clermont facility and limited cellar operations at our St. Augustine facility.  This person hires and leads all cellar personnel. They serve as a shift lead for crush operations at harvest.  They are responsible for cellar, crush, and supporting equipment operation, maintenance and efficiency.  They oversee and are accountable for coordinating and implementing all production/crush activities and ensuring timely and effective processing in all areas of production.  Duties include daily responsibilities and accountability for effective, efficient and accurate production operations in accordance with company SOP’s, maximizing labor resources, proper sanitation, timely equipment issue resolution, productivity standards, staff training and performance, accurate and timely recordkeeping, safety and brand image.   Through long and short term planning they ensure operations meet production and labor efficiency, on time supply procurement, quality control and safety goals.  They are responsible for maintaining and improving production productivity standards.  They ensure that the department is well run and effective in developing team and individual resources. 

 Primary Duties and Responsibilities

 

·       Hire, train, coach, and lead full time and temporary staff in cellar and crush operations, safety and brand image.

·       Evaluate staffing needs to maximize labor resources.  Schedule cellar/crush staff, track hours worked.  Ensure accurate daily documentation of hours worked by labor code in the time clock system.

·       Conduct verbal and written performance reviews of staff. Maintain staff training logs. Recommend staff wage adjustments. Take disciplinary action, address complaints and resolve issues in accordance with company policy.

·       Champion a safe and healthy work environment for employees through eliminating hazards, ensuring that mandatory safety training programs are up to date, ongoing, and that staff is in compliance.

·       Develop the team to solve own day to day operational issues.

·       Communicate effectively with multiple departments to ensure efficient workflow and to achieve company goals.

·       Ensure sanitation methods are effective and in accordance with industry standards and established company protocols/SOPs.

·       Perform all levels of cellar/crush activities and equipment operation when necessary.

·       Perform and ensure routine cellar/crush equipment operation and maintenance, repairs and adjustments, equipment troubleshooting and issue resolution to maximize equipment longevity.

·       Communicate with equipment manufacturer’s technical support to resolve equipment issues.

·       Research new equipment information and develop recommendations. 

·       Coordinate the installation and start up of new cellar/crush equipment.

·       Conduct on-going assessments of cellar/crush quality control and operational procedures.

·       Review, revise, develop and maintain SOP’s for all cellar/crush procedures as necessary to reflect current practices.

·       Ensure adherence to the processing schedule.

·       Ensure that cellar/crush procedures are completed in accordance with established protocols/SOP.

·       Identify and take action on non-conforming equipment, process, quality, branding and safety issues.  Ensure timely and successful resolutions.

·       Review and reconcile work orders to confirm accuracy.  Take a lead role in data entry of work orders in the production database.

·       Manage the cellar facility to maximize efficiency, space utilization, product availability and minimize product/ingredient losses.

·       Document product losses and costs.  Recommend and implement measures to reduce losses. 

·       Maintain and improve cellar/crush productivity standards.

·       Ensure accurate, timely, and thorough completion of cellar, crush and related labor sheets, checklists, logs, etc.

·       Assist Winemaker with cold stabilization and coarse filtration schedule.

·       Assist Winemaker with preparation of sparkling wine cuvee and dosage.

·       Assist Winemaker with preparing wines for bottling in accordance with Seavin Product Specifications.

·       Project, order and ensure on time procurement of materials/ingredients to support the cellar/crush schedule.

·       Ensure QC of cellar supplies/ingredients on receipt and initiate any necessary corrective action.

  • Prepare and complete the inventory receipt of materials/ingredients received into the Production Software system.  Generate lot numbers and ensure that materials/ingredients receive the appropriate lot identifier.  Complete related purchase orders and deliver to accounting. 

·       Ensure accurate and timely data entry into the production database.

·       Maintain and improve cellar/crush facility organization and cleanliness on an ongoing basis in accordance with the company brand image initiative.

·       Conduct bulk wine physical inventories for State and Federal audits and at other times as necessary to balance and ensure accuracy of the bulk wine inventory.

·       Order and track the receipt and depletion of all cellar supplies.

·       Conduct a timely and accurate supply inventory quarterly and at other times as necessary to balance and ensure the accuracy of the cellar supply inventory.

·       Issue and complete purchase orders in designated software for all supplies ordered.

·       Perform recordkeeping and administrative duties in a timely manner with a high degree of accuracy and thoroughness.

·       Monitor and ensure achievement of goals, objectives and timelines.

·       Operate material handling equipment including forklifts, pallet jacks and hand trucks.

·        Identify and participate in continuing education opportunities to increase job knowledge and skills, i.e. workshops, seminars, certificate programs, etc. 

  • Shift lead during crush operations.
    • Set up and operate presses, disassemble for cleaning and sanitation. 
    • Set up and operate crusher-stemmer, must pump and transfer pumps, disassemble for cleaning and sanitation. 
    • Set up and operate red wine pumpovers.
    • Drive tractor and operate hydraulic dump trailer to dispose of pomace.
    • Operate forklift to unload one ton grape bins and dump into crusher-stemmer.
    • Mechanical understanding of equipment and ability to make routine repairs and adjustments.
    • Interface with Transport Company delivering grapes.
    • Complete crush checklists, logs and labor sheets, etc.
  • Conduct routine general sensory evaluation of bulk wines and participate in evaluation of bulk wine for purchase.
  • Provide leadership in the sensory evaluation of wine for the purpose of wine improvement.

·       Perform related duties and special projects of a similar nature as may be required.

 

Education/Experience/Skills

 

·       5+ years industry wine production experience (preferably in a facility producing at least 100,000 cases annually).

·       3+ years industry supervisory experience.

·       High school education.  College level coursework.

·       Motivated, self-starting and team-oriented.

·       Demonstrate a positive, can do attitude and communication skills that fit well in a team.

·       Ability to train and direct less skilled workers, including temporary and seasonal labor.

·       Ability to work calmly under pressure with diverse personalities. 

·       Proven team building and leadership skills with the ability to mentor and motivate a team.

·       Past experience enforcing good safety practices and following safety regulations.

·       Demonstrated strong mechanical aptitude, problem solving and analytical skills. 

·       Ability to understand and accurately apply basic math calculations to practical situations, such as fractions, decimals, percentages, rates per hour and gallons per inch.

·       Demonstrated ability to accurately and efficiently manage daily administrative paperwork.

·       Proven ability to prioritize and manage workload effectively, meet deadlines and handle multiple projects in a dynamic, fast paced environment.

·       Demonstrated ability to manage personnel and equipment to improve productivity while maintaining quality and safety.

·       Demonstrated reliability in attendance and punctuality required.

·       Demonstrated commitment to high standards.

·       Above average organizational skills and attention to detail.

·       Forklift certified.

·       Demonstrated ability and willingness to handle rapid changes in production schedule and workload.

·       Ability to follow direction from a supervisor.

·       Ability to accept constructive criticism in a professional manner.

·       Demonstrate thorough, neat and orderly work habits.

·       Ability to read, understand and follow written and verbal instruction in English.

·       Experience with MS Office and iWork Suite to use the company databases.

 

 

Physical Requirements/Work Environment

 

·       Ability to lift 50 pounds frequently.

·       Ability to walk, stand and sit sometimes for prolonged periods of time.

·       Ability to climb stairs/ladder to work platforms 12 feet high or more frequently.

·       Ability to wear personal protective equipment. (Hearing protection, safety glasses, hair net, etc.)

·       Ability to work flexible shifts and schedules.  

·       During harvest must be able to work any shift, including weekends and holidays.

·       Ability to work outdoors under variable weather conditions i.e. the heat and humidity of a Central Florida summer.

·       Exposure to loud noise and work near moving mechanical parts and forklift traffic.

 

 

Other Requirements

 

·       21 years of age.

·       Demonstrated responsible consumption of alcoholic beverages.

·       Fluent in English

·       Successfully complete pre-employment drug/alcohol testing and a background check.

·       Must successfully complete OSHA safety training.

Quality control experience is an advantage
