Position Mission/Overview

This job contributes to the success of Hotel Sorrento by ensuring all standards are met.  We do this by consistently delivering truly personalized service to every guest, every moment of every day.  This job also performs additional responsibilities as needed to help the department manager with daily operating procedures such as maintaining quality operations, and maximizing financial contributions.  Hotel Sorrento guests and employees experience a genuine, caring and distinctive atmosphere. Banquet experience a plus!

Essential Job Functions/Responsibilities

  • Supervise and coordinate activities of cooks and workers engaged in food preparation.
  • Collaborate with other personnel to plan and develop recipes and menus, taking into account such factors as seasonal availability of ingredients and the likely number of guests.
  • Check the quality of raw and cooked food products to ensure that standards are met.
  • Coordinate the proper receiving of all products delivered on the morning shift (such as checking the quantity and quality of received products; ensure feedback to the vendors and effective recording of variances; etc.)
  • Inspect supplies, equipment, and work areas to ensure conformance to established standards.
  • Order or requisition food and other supplies needed to ensure efficient operation.
  • Analyze recipes to assign prices to menu items, based on food, labor, and overhead costs.
  • Record production and operational data on specified forms.
  • Ensure the day starts correctly by communicating with employees, other supervisory personnel and chef.

  • Skillfully uses utensils and equipment needed for the position.
  • Follows instructions and recipes as needed.
  • Measures, portions or otherwise prepares beverages and food with great precision and efficiency.
  • Accurately completes all types of register transactions such as refunds, discounts, coupons, etc.
  • Accurately completes cash reconciliation forms, waste logs, production sheets, etc.
  •  Communicates ingredients, preparation methods and promotions to guests as appropriate.

Other Skills/Abilities

  • Reads and understands and complies with instructions, safety rules and guidelines.
  • Speaks with poise, voice control and confidence using proper English and a well-modulated voice.
