Widmer Brothers Brewing, part of the Craft Brew Alliance, has an immediate opening for a salaried Executive Sous Chef in Portland, OR. The primary responsibilities are to supervise the production, preparation and presentation of all foods for the pub to ensure that a quality, consistent product is produced that meets CBA standards, food and labor costs and achieves guest satisfaction.
Specific job duties:
Supports the Company’s Vision, Mission and Values.
Plans and directs food preparation and presentation and coaches and counsels as necessary to achieve the highest quality standards.
Trains new employees to ensure consistency of performance and kitchen operations.
Monitors and controls the maintenance and sanitation of the kitchen and equipment to ensure a healthy, safe work environment in compliance with company and industry standards.
Monitors and controls all labor and food costs through effective scheduling, training and supervising the production of the food to ensure that budgeted food cost, kitchen labor cost and related operating expense goals are achieved.
Expedites orders to maximize efficient production and delivery guest in the proper order.
Engages customers to obtain feedback on the quality of the products, and suggestions for recipe development.
Performs various administrative responsibilities relative to cost analysis.
Perform other related duties as assigned
Position requirements:
A certificate, diploma or a degree in Culinary Arts, or equivalent applied experience.
Minimum of 2 years of experience as a Sous Chef managing a team of line cooks, prep cooks and dishwashers in a high volume restaurant.
