Position Summary:

Job Duties:

  • Ensure that all staff are here and working as scheduled
  • Check and inspect quality and quantity of all perishable items being delivered from outside vendors.
  • Ensure that staff has properly requisitioned all items need from the food storeroom for daily preparation.
  • Ensure that all food items requisitioned have been delivered and properly stored away.
  • Oversee all the main kitchen production in the absence of the Banquet Chef.
  • Oversee the daily production of the employee cafeteria, ensuring the highest quality at all times.
  • Oversee and inspect all preparation of food items for the Pavilion and Room Service, ensuring that all recipes and standards are followed and met.
  • Ensure that Pavilion line is properly set for breakfast, lunch and or dinner service by stewarding staff.
  • Oversee entire culinary operations of the Pavilion and Room Service line, ensuring that all standards are met.
  • Supervise and oversee the entire heart of house, keeping a close eye on service staff to ensure that all food quality and safety standards are strictly adhered to at all times.
  • Liaise with Pavilion and or Room Service managers as needed to rectify and concerns in regards to service staff.
  • Inspect and ensure that all safety, sanitation and food safety standards are strictly adhered to and met.
  • Confer with the Executive Chef or Chef de Cuisine on the daily specials.
  • Liaise with front of house managers to ascertain business expectations for the day and ensure that all staff is informed and properly prepared for said business.
  • Supervise and oversee and ensure the proper breakdown of all stations, with all food properly stored away.
  • Ensure that all staff is properly trained for the job at hand and the ability to develop and implement any training schedules as needed to develop staff.
  • Work with staff in regards to career development in order to maintain a well motivated and dedicated team.
  • Must be able and willing to support, work with and help other departments within the kitchen as needed.
  • Ensure that all control and key procedures are followed.
  • Must be certified in Food Service Sanitation.
  • Inspect and ensure that all kitchen equipment is in top working order.
  • Fill out any work orders as needed and liaise with engineering the repairs of said equipment.
  • At all times supervise and be a key leader in the control of all kitchen relates costs, food, labor and equipment.
  • React as needed to any surplus or shortages of staff in an effort to control costs at all times.
  • Must at all times be aware of all perishable food items in storage and ensure that proper rotation and usage of items.
  • Must be able to assume full responsibility in the absence of the Executive Chef and/or Executive Sous Chef.
  • Must be an active participant in the scheduling and performance evaluation of kitchen employees.
  • Must be able to respond properly in any hotel emergency or safety situation.
  • Must be able and willing to perform other tasks or projects as assigned by hotel management and staff.

Minimum Qualifications:

  • Reading, writing and oral proficiency in the English language.
  • High school graduate.
  • Eight years in hotel or other luxury kitchen in addition to supervisory skills.
  • High level of creativity and organizational skills.
  • Good leadership, training and motivation skills
