R&D Chef (Sommelier and Chef Jobs: Restaurants)

The R&D Chef works to improve Chipotle’s existing menu items, prep/cooking technique, and develop new menu items. This position manages a rigorous collaborative process of refining recipes to adhere to our food safety protocols, operational limitations, and food cost, requiring excellent organizational and communication skills. This role will heavily influence and support the ideation and creation phases of menu development, and create a platform whereby current and new recipes for both in-store operations and commissary partners are stored, with all changes tracked. A keen eye for the competitive environment, culinary trends, and food media are important.
Main Accountabilities
In addition to following Chipotle’s policies and procedures, principal accountabilities include, but are not limited to:
• Working with the Chairman and CEO, CMO, Menu Development Team, and Supply Chain on improving Chipotle’s existing menu and creating new menu items
• Working with Supply Chain to improve food, which includes raw ingredients, techniques, and processes used in preparation and packaging of commissary items
• Working with Operations and Training to identify ways to more effectively prep and cook our food, from prep to technique to portioning and service
• Working with Development and Facilities to advise on optimal kitchen design and equipment specs
• Managing the test kitchen, including scheduling and running tastings, requesting, receiving, and evaluating samples, proper note-taking, detailed feedback and effective correspondence with proper departments to move projects forward
• Leading R&D efforts for the Menu Development Team, preparing items for consumer-facing testing
• Creating and maintaining the necessary tools to support R&D; diligent record-keeping of recipes and test results
• Working closely with QA/Food Safety to ensure food specifications are accurate and representative of food innovations
• Working with Supply Chain to evaluate potential new suppliers with respect to food, manufacturing capability, and FWI fit
• Participating in the testing process, all the way through to rollout
Qualifications Education/Training
• Bachelor’s degree and/or Culinary Arts degree or an equivalent in education and experience
Knowledge/Skills

Work Experience
• Six (6) to eight (8) years restaurant operations experience with a proven track record as an Executive Chef, or similar experience food science, product development, and CP
