Autumn Restaurant Sommelier (Sommelier and Chef Jobs: Restaurants)

The Sommelier plays an important role in the Food and Beverage Department. This position is responsible for the daily activities necessary for maintenance and promotion of wine and spirits to include revenue/cost goals, superior guest service, and detailed knowledge of all related products. The Sommelier will primarily work out of the Autumn Restaurant, but may be placed at numerous Food and Beverage outlets throughout the resort including but not limited to Nemacolin's Forbes and AAA rated fine dining outlets.┬á Duties Responsible for the recommendation, sale and service of wine and other beverages Familiar with standard concepts, practices, and procedures within a particular field Maintain and update wine and other beverage lists Be available to conduct weekly wine classes in the Academie du Vin and for private groups as well as ability to give private and educational wine tours Maintain standards of Forbes according to the 2013 specifications Leads and directs the work of others A wide degree of creativity and latitude is required Typically reports to a head of a unit/department. Ensure wines of critical age are sold and existing dead stock is being eliminated Work closely with chef de cuisine in pairing menus and suggesting pairings for guests Lead in nightly setup and breakdown for professional wine service Assist in ensuring monthly beverage inventory is completed in a timely manner as well as variance report with cellar attendant Maintain active presence in dining areas, offering extra help during busy periods. Assist all servers with wine and/or beverage service where needed. Ensure glassware cleanliness and ample inventory during daily setup Be instrumental in developing, maintaining, and executing specialized spirit program Qualifications Associate's degree in the area of Hospitality Management or Business Management; or its equivalent and at least 3 years of experience in the field or in a related area. Level One Certificate from Court of Master Sommeliers or comparable professional association ie. CWS Detailed knowledge of wine varietals, regions, wine making practices and innovative industry techniques as well as all product labels on outlet list Work towards target revenue by controlling costs, appropriately monitoring and understanding list pricing, costs and proper pours Ability to work weekends, evening hours and holidays Ability to lift 40 lbs
