What you'll do:

The Executive Chef will direct and supervise all aspects of multiple outlet food operations at GREEKTOWN Casino. This individual will excel in their teaching and training ability and have the patience and knowledge to lead the culinary operation to achieve excellence and notoriety in all aspects of the operation.

Responsibilities:

  • Assume complete charge of the kitchen
  • Administer disciplinary action
  • Comply with the Union Contract
  • Adapt the crew to any change in the volume of business
  • Enforce the rules of the Health Department
  • Ensure employee's duties are performed to specifications set
  • Responsible for dress code and appearance standards
  • Maintain a daily production inventory
  • Responsible for checking the methods of preparation, sizes or portioning and the garnishing of food
  • Assist with cooking, carving difficult dishes during rush periods
  • Other job related duties as assigned
  • Training in all related position in food department
  • Direct and maintain culinary standards
  • Solve and develop complex work and production schedules
  • Maintain forecasted food and labor costs
  • Other duties as directed by management

Requirements:

  • Understand and comply with all company and departmental rules and regulations, policies and procedures.
  • Good communication skills.
  • Skill in establishing and maintaining effective working relationships with staff
  • Ability to read, write, and communicate verbally in English
  • Ability to perform basic math
  • Knowledge of appropriate union contracts
  • Experience in casino operations is essential
  • Full working knowledge and practice of garde manger, saucier, rotisserie, entremettier, ice carving, wine and banquets
  • Ability to write recipes, menu specifications and maintain product costs
  • Working knowledge of common software programs, such as MS Word & Excel

Education: 

  • Degree in Culinary Arts/Hospitality

Experience: 

  • Minimum of three years as Executive Chef supervising a similar operation with multiple outlets serving a variety of cuisines

Certificate/License: 

  • Michigan Gaming Occupational License Level One (1).
